The Procrastinator’s Guide to a Vegan Thanksgiving

MeetTheShannonsVeganThanksgivingSo today is my first day with my repaired laptop. I have my photos back and the ability to edit photos. You could say we have our blog back (it’s OK to say that)… just in time for one of the USA’s most beloved food tradition: Thanksgiving! 

Some of us (me) might have fallen behind on our lives this fall (I did). Maybe you started school, a new job, had a baby, flew across the Atlantic solo, were trapped on a door after an iceberg sunk your cruise ship – you know the usual excuses and Thanksgiving seemed like this roasted cinnamon and sage dusted oasis in the future – not something that is a week away. YES. IT IS ONE WEEK FROM TODAY. Maybe you haven’t even fired up your search engine yet to find the prefect collection of recipes and inspiration to wow even your most carnivorous friends and family (like me). You probably wanted to but life can be distracting. So we collected all our Thanksgiving-ish recipes into one big ol’ cheat sheet to save you time and as always lots of these recipes involve using some of the same ingredients in different ways so you can reuse the ingredients in multiple recipes. We tried to think outside the box a bit too to offer something different than just dolled up holiday roasts and green bean casseroles – but those are in there too. We also encourage you to explore the Thanksgiving section of our book Betty Goes Vegan – there’s some really good stuff in there like Sweet Potato Whoopie Pies with Marshmallow Filling and Peking Tofurky.
