These cookies are really good. Let’s make some!
Cherry, Walnut & Chocolate Chip Cookies
2 1/4 Cups Whole Wheat Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Cup Sugar
1/3 Cup Brown Sugar
1/2 Cup Margarine (softened)
1/2 Cup Olive Oil
3 Tablespoon Water
1 1/2 Teaspoon Vanilla
1 Cup Dried Cherries
1 Cup Vegan Chocolate Chips ( we found some really good ones at Trader Joes)
1/2 Cup Crushed Walnuts
Pinch of Cinnamon
Pinch of Nutmeg
Heat oven to 375.
In a large bowl, mix Flour, Baking Soda, Cinnamon, Nutmeg and Salt.
In a large bowl, blend Sugar, Brown Sugar, Margarine, Olive Oil, Water and Vanilla with an electric hand mixer at a low speed until smooth.
Add the Flour mix to the Sugar mix and blend with the hand mixer until smooth. Mix Cherries, Chocolate Chips and Walnuts into the dough with a large spoon. Drop a spoonful of dough onto the cookie sheet for each cookie about an inch apart. Bake for 8-10 minutes. Pull them out when they are golden brown.

Could I make these with rice flour, and would they taste as nice?
We haven’t tried this recipe with rice flour so I’d hate to say yes or no. I think the cookies will be crisper – so I would bake them for less time.
