Life is just going by so fast right now and while my inner calendar keeps thinking it’s early February… the reality is that this weekend is St.Patrick’s Day. Seriously  Who let this happen?!

Keeping true to the story of my life – all the plans and hopes and dreams I had for this St.Patrick’s Day will either be rushed or be postponed for next year. I don’t like rushing so you may or may not get an awesome Irishy recipe this tomorrow or you will not. I think you will but let’s not gamble. I mean we’re a blog called Meet The Shannons for crimney’s sake*. Even if I’m just an Irish-American by marriage – I know there’s a lot of you out there that want to spend this Sunday paying a little tribute to your homeland. Who can blame you? Ireland is freaking awesome. I mean the brief time I spent there was spent campaigning against fur farming and I met so many compassionate people who were doing everything they could for “those poor wee babes” on those farms. Their determination is the definition of  inspiring.

Today I’m going to share with you some pretty awesome St.Patricky recipes to help you bring a little of that charm and loveliness to your celebrations this weekend. All these recipes are Dewey McNiff (our friends’ adorable, one-eyed, lucky lad pictured above who was adopted about a year from Pug Nation Rescue of Los Angeles, CA) approved.

Cauliflower Calcannon
Vegan Irish Coffeecake Cheesecake with a Shortbread Crust
Corned Beef-less Brisket with Cabbage
Irish Coffee Cupcakes with Whiskey Frosting
Beef-less Stew
Roasted Rosemary & Dark Beer Tofurky
Beer & Cheese Soup (our analyics tells us this recipe is really popular in Ireland)
Shortbread Cookies

I hope that’s enough to get you started! Cross your fingers and wish on a rainbow or something that we get that post up tomorrow!

*I’m just making up sayings at this point.
